White Chocolate Bar Guide
White chocolate is a popular choice for those who like sweet and creamy things. White chocolate is typically made from sugar, milk and cacao butter (and often enhanced with vanilla). Cacao butter doesn’t have a particularly chocolatey flavour, but it gives chocolate the creamy, melty mouthfeel we all love. Pure white chocolate is delicious on its own, but here are some of the best ways chocolate makers have livened up white chocolate!
Fruity Flavours
White chocolate’s subtle flavours make it a great base chocolate for adding fruit flavours such as Willie’s smooth and creamy Raspberries and Cream and Chocolate Tree’s Forest Fruits or Lemon & Poppyseed (fresh and creamy and very popular in the Chocolatarium's Tasting Room).
Surprising Flavours
Here are three very different bars! For green tea lovers, Willie's Matcha is a smooth chocolate in an awesome green colour. For super spicey white chocolate, Grim Reaper’s “Purgatory” combines Ghost Pepper chillis with cooling smooth white chocolate. Our favourite, Stateside’s Ice Cream Float, has the very nostalgic smell and taste of a cola bottle!
Pudding-Inspired Chocolate
Kernow do a fantastic range of bars inspired by traditional British puddings. In white, they have a Lemon Meringue and Eton Mess, mixing strawberry with crunchy meringue pieces.
Pure White Chocolate
Montezuma's Great White is a delightful, sweet, and creamy bar with organic and gluten-free ingredients. However, Willie's Cacao stands out by creating a bar of deliciously creamy white chocolate with the highest quality ingredients that taste good enough on their own without the need for added vanilla. Their El Blanco bar contains only cacao butter, sugar, and milk, offering a pure and exceptional taste.
Blonde Chocolate
Blonde chocolate is essentially white chocolate that has been toasted, creating deep and delicious caramel flavours and lovely light brown colour. Blonde chocolate is to roast potato what white chocolate is to mashed!
For a high-end bar, Harris and James do a smooth and not-too-sweet Caramelised White (blonde) chocolate made with just three ingredients - cacao butter, toasted milk powder and sugar.
Kernow’s smooth Creme Caramel and Creme Brulee (with butterscotch chips) have created the blonde taste and realistic pudding flavours by skilfully combining caramel with chocolate.
Ruby
Ruby chocolate is a naturally pink and naturally fruity chocolate that is close in sweetness to white chocolate.
Ruby chocolate was only invented in the last ten years (2015). It is marketed as the fourth type of chocolate, alongside dark, milk, and white chocolate but is unique in that only one company can make it (Swiss-Belgian chocolate giant Barry-Callebaut) as it is a closely-guarded industry secret!
The naturally pink chocolate is made from specially selected cocoa beans, which undergo a unique processing method that brings out its distinctive rosey colour and fruity flavour. You might have come across this chocolate covering a raspberry Magnum ice cream or on a pink KitKat.
