If you’ve ever seen Willie’s Wonky Chocolate Factory on Channel 4, you’ll already know the man behind Willie’s Cacao — the ever-passionate Willie Harcourt-Cooze. But behind the charm is a true pioneer of British bean-to-bar chocolate.
Willie’s journey began in Venezuela in the 1990s, where he bought Hacienda El Tesoro, a 1,000-acre cacao farm. After years perfecting his craft there, he returned to Devon, England, to launch one of Britain’s first single-origin chocolate makers. His mission? To showcase the incredible diversity of cacao and craft chocolate the slow, traditional way — taking three weeks where big brands take hours.
Every bar is made with hand-selected single-origin beans and minimal ingredients, letting the cacao’s natural flavours shine. Willie personally oversees every stage, from roasting to tempering, ensuring each bar captures the true spirit of its origin — from fruity Madagascan to smoky Indonesian cacao.
Their Milk of the Stars is a smooth and creamy milk chocolate with deep caramel and smoky notes from Indonesian cacao. While their Raspberries & Cream includes sweet-tart raspberries and velvety white chocolate combined in a stunning pink bar.
Willie's Matcha bar uses earthy Japanese matcha paired with creamy white chocolate for a subtle, balanced, and beautiful bar. Their Pistachio & Date dark chocolate bar is naturally sweet due to the dates and crunchy pistachios mellowing out the intensity of pure cacao for a complex, no-added-sugar delight.
