Salted Chocolate
Salt and chocolate are a match made in flavour heaven, playing perfectly into the sweet-and-salty science that makes this pairing so addictive. From the salted caramel boom to the now-essential sprinkle of sea salt on brownies and cookies, salted chocolate has earned its place in our hearts (and cupboards).
Salt acts like a flavour amplifier. It switches on our taste receptors, making sweetness taste sweeter while simultaneously softening cacao’s bitterness. The result? Chocolate that’s more balanced, more complex, and far less cloying.
Here are some of our favourite salted chocolates! First off, we've got Willie's Cacao's Sea Flakes 44% milk chocolate. This is masterclass in sweet-and-salty restraint. This slightly darker milk chocolate melts beautifully, with crunchy sea salt flakes delivering little bursts of savoury contrast. Simple, elegant, and perfectly balanced. Or looking something with more zing, try Seed & Bean's Cornish Sea Salt & Tangy Lime 37% milk chocolate. This flavour combo might sound rogue, but it works brilliantly. Smooth, sweet milk chocolate meets zingy lime oil and a touch of salt for a bold, almost tequila-shot-style flavour hit that keeps things fresh and exciting.
Taking us to the darker side of thing, Bare Bone's Dominican Salt 68% dark chocolate folds sea salt directly into their Dominican dark chocolate, giving every bite an even, savoury edge. What starts as rich chocolate slowly develops into something almost umami. And to round things out, a more gentle salted dark chocolate would be COCO Chocolatier's Isle of Skye Sea Salt 61%. Using briny, sustainably produced sea salt from the Isle of Skye, this bar strikes a beautiful balance between sweetness, bitterness and bold salinity.
