The main ingredients of white chocolate are cacao butter + sugar + milk. It’s the cacao butter that gives your mouth the creamy, buttery texture that you love, but cacao butter doesn’t usually have much of a flavour to it! So vanilla is added to white chocolate to enhance the taste. Montezuma’s Great White is a lovely sweet and creamy bar with added vanilla and is organic and gluten-free too!
However, the very best quality cacao butter tastes good enough not to need vanilla and Willie’s Cacao are one for the very few chocolate makers who have produced a delicious creamy white chocolate without it. Their El Blanco bar is made with just cacao butter + sugar + milk and nothing else!
