Floral & Herby Chocolate
Lavender, rose, violet… lovely in a garden, questionable in a chocolate bar? We hear you. Floral and herby flavours often get dismissed as too perfumey or out of place—but when used properly, they create beautifully complex chocolates unlike anything else.
Floral and herby notes are naturally aromatic and subtle, which makes them ideal partners for chocolate’s bitterness and depth. When balanced well, they soften cocoa’s darker notes and add layers of flavour rather than overpowering it.
Here are some of our favourite floral and herby chocolates, starting with Scots Pine 66% dark chocolate by Charlotte Flower. Foraged in the Scottish Highlands, this bar infuses young pine shoots into cocoa butter for a gently herby, floral flavour.
Much more classicaly floral, Seed & Bean's Sweet Lavender 72% dark chocolate uses lavender’s earthy, powdery notes to deepen the chocolate without tipping into perfume territory. Dominican cocoa keeps things tropical and balanced, making this a calming, subtle entry point into floral chocolate.
For a white chocolate, Charlotte Flower has an Elderflower 34.5% white chocolate that uses elderflower’s lychee-like fruitiness to shine in this sweet white chocolate. Light, fragrant and beautifully balanced, it lets the floral notes take centre stage without becoming overpowering. But for those looking a classic done right, try JustBe's Rose 70% dark chocolate. Rose oil and petals bring a bold floral hit, balanced by rich dark chocolate. Think Turkish Delight, but deeper and more grown-up.
